There’s no need to be intimidated by this classic French dessert. We bring you a simple chocolate mousse. Tempering eggs may seem a little daunting, but we’re here to guide you through it until you feel like a pro! Chocolate mousse requires only 5 ingredients, 20 minutes of hands-on time and 2 hours of refrigeration. Just let your freezer do the rest and freeze your mousse to perfection. The hardest part of this recipe is deciding which cute little bowl or glass to serve it in!

  • Tempered eggs:

    The most critical step in chocolate mousse is tempering the eggs. Warming cream with raw egg yolks will just scramble the eggs, so we’re going to heat the cream slowly. Make sure to pour a steady stream of cream into the yolks and whisk quickly. Once you’ve added half of the cream, you can pour the egg mix into the remaining cream on the stove. Continue to stir constantly while cooking on the stovetop.

    If you happen to get a few lumps of egg, you can always strain it out through cheesecloth.

  • Chocolate Options:

    You need good quality chocolate for this recipe. We like semi-sweet chocolate mousse, but you can use milk chocolate too. Some of our favorite brands are Guittard, Ghiradelli and Lindt baking chocolate.

  • What should I serve the chocolate mousse with?

    There’s no need to go out and buy something special to serve chocolate mousse with, but if that’s your jam, we certainly won’t stop you!You can use whatever you have on hand: small bowls, juice glasses, even champagne flutes

  • Explanation in advance

    You can make the chocolate mousse up to 3 days in advance. Cover with plastic wrap and store in the refrigerator until you are ready to serve. Just be sure to wait until just before serving to top the chocolate mousse with extra whipped cream and chocolate chips.

  • Storage Instructions:

    Store leftover chocolate mousse in the refrigerator for up to 3 days, or in the freezer for up to 2 months. Keep in an airtight container.

  • 4 big yolk
  • 1/2 cup granulated sugar
  • 3 cup heavy cream divided into
  • 8 ounce Semisweet Baking Chocolate chop up
  • 2 teaspoon vanilla extract

  • In a large mixing bowl, using a hand mixer or whisk, beat the sugar and egg yolks for 2-3 minutes, until well combined and creamy.

  • In a medium saucepan, heat 1 cup whipping cream over medium heat until simmering. Make sure to stir while heating to prevent burning. Once the cream has reached a simmer, quickly and carefully pour half of the hot whipping cream into the egg mixture in a steady stream, stirring constantly to avoid curdling or overcooking the eggs.

  • Immediately pour the egg mixture back into the saucepan, stirring constantly. Return to medium heat and stir constantly until the mixture thickens, about 5 minutes.

  • Remove from heat and stir chocolate into hot mixture. Stir until all the chocolate is melted.

  • Cover and refrigerate for at least 2 hours.

  • In a refrigerated medium mixing bowl, add remaining 2 cups heavy cream and vanilla. Beat the mixture with a hand mixer until stiff peaks form in the cream. Using a spatula, fold the chocolate mixture into the whipped cream mixture, continuing to mix gently until well combined.

  • Serve with a dollop of whipped cream and chocolate chips for garnish, if desired.

notes

This is a very light mousse. If you want it richer, just stir 1 cup of whipped cream into the finished chocolate.
