See that photo? The one right above this? That’s a real burger. I pulled it together from raw to what you see there in about 15 minutes. I didn’t dress it up or do anything to stage it. That’s really my lunch. In fact, I made more than one because my family was hungry too. It took me less than 5 minutes to photograph it (including the arrangement) before I sat down to eat it bite by bite. So what’s the point of telling you all this? Well my friends, the perfect burger is easy to make. It really can be as good as it looks. Below I share my 7 secrets to making the perfect burger.

  1. The most important ingredient in a perfect burger is the meat. Burgers are all about the meat. Burger meat is not the same as ground beef. The short explanation is that burgers can have various fats added to them, and ground beef is a specific ground beef.
  2. Fat content matters! I use 15% fat. I’m usually a skinny brisket girl when it comes to other uses for ground beef, but when it comes to burgers, fat is the key to keeping the burger together and creating a juicy bite.
  3. There are three different grades of beef, select, choice and prime. You should at least use USDA Choice (only 50 cents to $1 more per pound). I use 1/2 lb of meat for each burger.
  4. If you’re using premium meat, you need to keep your seasoning simple. Meat needs only salt and pepper.
  5. Don’t over-process meat. Make it into a patty with as little “work” as possible.
  6. Burgers taste better grilled than fried. Always grill it if you can. Brown the juices over high heat, then reduce heat to low and cook to desired temperature. If you use prime beef, it will probably be pink in the middle (medium rare).
  7. Toast your bread. This will prevent a mess. When you add juicy burgers and wet toppings like ketchup. I like to brush them with a little garlic butter before grilling for extra flavor. Top it with any toppings you like.
