I am Willow:
If you’re watching your sodium intake, you can always substitute low-sodium soy sauce.
Ginger and Garlic:
Fresh is always best, but you can substitute powdered ones if desired. When you switch to dry, you don’t want to use as much, so substitute 1 1/2 tsp garlic powder and 1/4 tsp ground ginger.
Why Does Juicy Chicken Marinade Recipe Have Soda Water?
The sugar and carbonation in soda can soften the meat, so you don’t want to skip this ingredient. Regular sugar soda is best, but diet soda is fine in a pinch.
Marinating time:
When you’re pressed for time, you can always stick to the minimum marinating time in this recipe, but the longer you let it marinate, the deeper the flavor will be. For best results, marinate for 24 hours.
Meat Choices:
This marinade works great on chicken breasts and thighs, but you can always try it with turkey breast, a plant-based chicken substitute, or tofu.

Cooking options:
You can bake this on an outdoor grill or indoors on the stovetop with a griddle. Alternatively, you can roast the chicken in the oven following the time and temperature instructions in our Roast Chicken Breast recipe.
Storage and Reheating Instructions:
Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat on a grill or on the stovetop in a griddle over medium heat until heated through.
