If you’re anything like me, then you’re determined to eat better. I eat a big, delicious salad and feel good about myself and my goals. My goal this year is surfing, which involves losing a little weight and converting it into upper body strength. I did fall off the skateboard from a squat, so I’m making progress, right? Well, I’m hoping things like salads and more veggies will help me get to a physical condition that will allow me to do a good “pop” (think burpees you do while moving your balance on water). It has to work, right? One of my favorite salads is Apple Cheddar Pecan Salad. You can substitute walnuts if the price suits you. Finish with a homemade dressing and you have a delicious salad.

1 head green lettuce
1 head red lettuce
4 apples, peeled, cored, and diced
6 oz.sharp cheddar cheese, cubed
1 cup toasted pecan halves
1/4 cup olive oil
1/4 cup.apple cider vinegar
1 sweet apple, peeled, cored and halved
1 TB.dijon mustard
1 clove garlic, peeled
pinch salt
instruct
1. Wash the lettuce and cut into easy-to-handle pieces. Toss lettuce with diced apples, cubed cheese, and pecan halves.
2. Combine the olive oil, apple cider vinegar, sweet apples, Dijon, and garlic cloves in a food processor to make the salad dressing. Puree it using the S-blade.
3. Drizzle with salad dressing and serve cold.
