These pork chops are one of my favorites. While it’s delicious in the fall, I tend to eat it year-round. It has a balance of sweet and savory flavors that is comforting and delicious. It’s easy to make and takes about 20 minutes to make. It also tends to be cheap! This makes it the perfect meal to impress a crowd.

Let’s start with the fact that pork is red meat. Does this surprise you? Decades ago, hog farmers decided to try to compete with chicken and marketed themselves as “the other white meat.” Pigs are bred and modified to be leaner and whiter. It comes at a price, the pork loses a bit of its flavor and is more prone to overcooking and drying out. The knowledge that pork is red meat is important. Don’t treat it like chicken. Pink chicken is absolutely inedible, but pink pork can be done just fine. Use a meat thermometer if you must! Your pork only needs to get to 145 degrees in the middle. If you cook lean meat beyond that, it will be overcooked and dry out, making it tough and chewy. I eat way too many overcooked pork chops and pork tenderloin because home cooks pass it off as chicken. stop! It’s red meat! Use this knowledge and go produce tender pork chops, because now you can!
