- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 2 tablespoon olive oil Divided into
- 2 baked apples cored, cut into pieces
- 1 large white onion diced
- 1 tablespoon brown sugar
- 1/2 Shallot cut into chunks (optional)
- 1 baked apples cored and sliced (optional)

Preheat oven to 400 degrees. Slice each pork chop lengthwise, making a slit or pocket in the meat. Season both sides with salt and pepper and set aside.

Heat 1 tablespoon olive oil in a large, heavy oven-safe skillet over high heat. Add diced apples, diced onion, and brown sugar. Cook for 5 to 7 minutes, until the apples and onions are tender.

Spoon the mixture into the pork chop pockets until full, then wipe the pan clean. Secure the pocket opening with a toothpick, leaving the mixture inside.

Reheat pan and add remaining 1 tablespoon olive oil. When hot, place the pork chops in the skillet and cook 2 to 3 minutes per side.

Scatter the red onion chunks and apple slices (if using) in the skillet around the pork chops, then place the skillet directly into the preheated 400 degree oven. Let the pork chops finish cooking, 15 to 20 minutes, or until the pork reaches an internal temperature of 145°F.
