A fun and delicious April Fools’ Day dinner idea where all is not as it seems. Meatloaf Cupcakes with Mashed Potato Frosting, Apple Chips and Cocoa Shortbread Mock Meatloaf.

Have fun and fool the whole family with this dinner. I have fond memories of my own mother making such fun meals for us. I made a video to go along with it. Be sure to check it out as it has extra tips and is a great visual of how to pull off this tricky meal. Sure, it’s easy to make, but it’s sure to trick people!

Meatloaf Cake with Mashed Potatoes "frosting" It looks just like the real thing!

This cupcake is nothing like it seems! Make cupcakes out of the meatloaf, then top with mashed potato frosting.

Preparation time 10 minute

instruct

  • Preheat oven to 350 degrees. Lightly grease muffin tins.

  • Make your meatloaf mixture. You can use any recipe or check out my favorites above.

  • Make everything except the glaze.

  • Form the patties into large meatballs to fill the holes of the muffin tins. Bake in preheated oven for 35 to 40 minutes. After baking, remove from muffin tins and place in cupcake liners.

  • At the same time, make a batch of

  • Mashed potatoes

  • Transfer mashed potatoes to a pastry bag fitted with a star tip.

  • Frost “cupcakes” with mashed potatoes.

  • vegetable or canola oil for frying
  • 4 Granny Smith Apples
  • 1/2 cup corn starch
  • 1/2 cup sugar
  • 2 teaspoon ground cinnamon

  • Pour oil into a large heavy skillet enough to cover the pan with 1/2 inch of oil.

  • Peel the apples. Cut 1/4-inch slices from apples, leaving cores. Cut each of them into the shape of French fries.

  • Working in batches, sprinkle the cornstarch over the apple slices, covering each one completely. Fry in oil for about 2-3 minutes until golden brown.

  • Drain for 60 seconds on a plate lined with paper towels.

  • Combine sugar and cinnamon in a small bowl. Roll “chips” in the mixture and serve immediately.

Cocoa Shortbread Mock Meatloaf

Use Cocoa Shortbread to simulate meatloaf.

raw material

  • 7 cup Cocoa Shortbread
  • 2 tablespoon butter
  • 3 tablespoon cocoa powder
  • 10 ounce Mini Marshmallows
  • 1/4 cup Seedless Raspberry Jelly
  • 2 tablespoon cocoa powder

  • Place 6 cups of Cocoa Shortbread in a gallon resealable bag. Beat with a mallet or rolling pin until crushed. Stir in remaining 1 cup shortbread. on hold.

  • Melt butter in a large saucepan over low heat. Meanwhile, lightly grease a baking sheet.

  • Stir cocoa powder into melted butter until smooth. Pour in the mini marshmallows and stir constantly over low heat until the marshmallows are completely melted.

  • Immediately pour the melted marshmallows over the shortbread and stir to combine.

  • Using greased hands, shape the shortbread into free-form meatloaf shapes on the prepared baking sheet.

  • In a small bowl, whisk together raspberry jelly and cocoa powder until fully combined. Brush glaze over top of “patties”. Let the bread cool completely (about 30 minutes) before slicing.
