I absolutely love Mexican street corn. It tastes amazing. In fact, they’re so inspiring that I’ve even made a soup based on the taste. You can’t help but fall in love with these heady treats.

A cruise is a great way to see the Mexican Caribbean. We were of course able to see the coast, but we were also able to drive a great distance inland and see the amazing Mayan ruins. Once I nearly lost a friend I was traveling with because I saw a street cart selling Mexican street corn. My stomach forces me to go straight for it. I can’t help it. This is delicious!

Clearly, we’ve seen some amazing things. We climbed over ancient Mayan ruins, hiked through the jungle and even saw a monkey. We swam with turtles and dined on the beach. We meet Mayan families and explore the most beautiful underground water formations called cenotes.

I fell in love with the Mexican Caribbean. I can’t wait to go back and take my family there. Not only is the food amazing, but the people and culture here are truly special too.

I’m there to exactly replicate the taste of street corn, and sure as hell ask a lot of questions, I can make it right for you. One of the important things to do is to grate your Cotija cheese, not crumble it. This will give you the right texture and will work even better with our blend.

Hot sauce and chopped cilantro are optional garnishes for Mexican street corn. For the hot sauce, use a good quality Mexican-style hot sauce. I personally like to add hot sauce because it adds both heat and flavor. Add cilantro for color and flavor, if desired.

raw material

  • 4 ear peeling corn
  • 1/4 cup mayonnaise
  • 1/4 cup Mexican crema
  • 1/2 cup grated Cotija cheese
  • 1/2 teaspoon Ancho Chili Powder
  • 1/4 teaspoon Salt
  • hot sauce Elective
  • 1/4 cup fresh chopped cilantro Elective

  • Wrap the corn in aluminum foil and roast on a 400 degree grill or in a 400 degree oven for 15 minutes.

  • Meanwhile, in a small bowl whisk together mayonnaise, Mexican crema, 1/4 cup Cotija cheese, paprika, and salt.

  • Spread the cooked corn mayonnaise mixture. Sprinkle with remaining Cotija cheese. Serve hot sauce and sprinkle with cilantro, if using.
