We love finding ways to use fennel in cooking. This is great for you! If you haven’t jumped on the Anise bandwagon, you should. Fennel has a licorice flavor that sets it apart from many other vegetables, especially greens. Its unusual flavor makes it an interesting ingredient. Light and refreshing, this salsa is the perfect summer snack. Cucumbers, fennel, and avocados are also rich in vitamins and nutrients. It’s savory, bright, and delicious!

How should I cut fennel?

First cut the bulb from the leafy stem, then cut off the base end where the root is. You’ll be left with a white bulb. You can now slice and dice this portion. You can eat the whole vegetable you buy, including the leaves and stems. This recipe requires only bulbs.

  • 1 Fennel Bulbs cut into small cubes
  • 1 cucumber cut into small cubes
  • 1/2 Shallot minced
  • 1/2 cup chopped fresh cilantro
  • 2 lime Juiced
  • 2 tablespoon sugar Elective
  • 1/2 teaspoon Salt
  • 2 avocado diced

  • In a large mixing bowl, combine fennel, cucumber, onion, and cilantro.

  • Stir in lime juice, sugar and salt.

  • Gently fold in the avocado. Serve at room temperature or refrigerate.
