So, when it comes to recipes involving Nutella, you know I can whip up something amazing. This recipe is no exception. A delicious bacon muffin is great on its own, but when you stuff it with a little peanut butter, you’ve got a magical surprise waiting for you in the middle.

  • 1 pound bacon
  • 2 1/4 cup all purpose flour
  • 3/4 cup granulated sugar
  • 2 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 3/4 cup milk
  • 1 Egg
  • 2 tablespoon bacon grease
  • 1/2 cup butter melted
  • 12 heaping teaspoon peanut butter

  • Place bacon strips on 2 baking sheets. Place in cold oven. Set the oven to 400 degrees and set the timer for 20 minutes. After the bacon has cooked for 20 minutes while the oven is preheating, check the bacon for doneness. You’ll want a crispy bacon to crumble into muffins. Add up to 5 minutes if necessary. When done, remove bacon from pan and transfer to a plate lined with paper towels to drain. Reserve some bacon grease on the pan for later. Reduce oven temperature to 350 degrees.

  • Prepare the batter by combining the flour, sugar, baking powder, cinnamon, and nutmeg in a large bowl. Stir to combine.

  • Add milk, eggs and bacon grease. Crumble the bacon and add to the mixture. Pour in the melted butter and stir to combine.

  • Lightly grease muffin tins or use cupcake liners. Spoon in enough batter to cover the bottom of each muffin tin. Then, pour a tablespoon of peanut butter into each muffin tin. Cover the peanut butter with the remaining batter.

  • Bake in a 350 degree oven for 20-25 minutes, until starting to brown. Remove muffins from tin and let cool on a wire rack.
