Mustard options for Baked Honey Dijon Chicken and Potatoes:
For this recipe to really shine, be sure to use whole grain Dijon mustard. Not only does it give a beautiful finished look, but it’s also delicious. If you don’t have any, you can always use regular Dijon mustard.
-
Add parsley:
This recipe can be garnished with a little chopped fresh parsley for a little extra color. It might look a bit bland without the parsley, but trust me, this meal is packed with goodness!

Can I use other chicken pieces in this recipe?
We love the simplicity of chicken breasts because we always have extra on hand. If you prefer chicken thighs or even drumsticks, you can always substitute. Keep an eye on the temperature and make sure you’re still cooking to an internal temperature of 165 degrees Fahrenheit.
