The doctor gave us a recipe for bran muffins many years ago when we were pregnant with our first child.We love bran cereal and those muffins taste delicious OK, but they are definitely not the best. Over the years, we took that recipe and tweaked it here and there until it evolved into this! This recipe is a bran muffin that actually tastes good! The key is coconut oil. It provides a subtle coconut flavor to the muffins, giving it a new and improved taste. Who knew bran muffins could be so delicious?

Bran Grain Options for the Best Bran Muffins Ever:

There are three main types of bran: wheat bran, rice bran, and oat bran. We recommend using shredded wheat bran (whole bran) in this recipe for the best flavor and texture. In a pinch, only flakes? Food Allergy or Celiac Disease? Try oat or rice bran, but stick to whole wheat bran whenever possible.

What if I don’t have buttermilk?

Pro tip: You can actually make a buttermilk substitute at home using milk and white vinegar. Add 1 tablespoon of vinegar (or lemon juice) to 1 cup of milk and let sit for 10 minutes. That’s it. It really doesn’t get any easier than this. Whatever milk you have on hand will do, even almond milk if you’re dairy-free.

What can I use instead of coconut oil?

We highly recommend using coconut oil for extra flavor. However, melted butter or vegetable oil can be used in a pinch.

  • 1 1/2 cup 100% whole bran cereal
  • 1 cup cheese
  • 1/3 cup coconut oil melted
  • 1 big Egg
  • 2/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon Salt

  • Preheat oven to 450°F. Lightly spray muffin pans with nonstick spray or line with paper cups.

  • In a medium mixing bowl, soak the bran cereal and buttermilk for about 10 minutes, until completely soaked.

  • Add melted coconut oil, eggs, brown sugar, vanilla extract, flour, baking soda, baking powder, and salt. Stir well. This mixture will be very thick.

  • Divide batter evenly among 12 muffin cups, nearly filling.

  • Bake in a preheated 450 degree oven for 5 minutes. Without opening the door, reduce the heat to 350 degrees and let the muffins continue to bake for 8 to 10 minutes. Remove from pan and cool on a wire rack.
