cross infection:

Cross-contamination is the accidental transfer of bacteria from one item to another. In this recipe, you need to be careful not to contaminate your barbecue sauce with bacteria from the raw chicken. If you touched the chicken with a brush or spoon and then put that utensil back in the bowl, the sauce is contaminated. This means that the sauce must be cooked before it can be eaten.

To avoid this, use a clean spoon to pour a small amount of the sauce into the bowl, and use a different spoon or brush to spread this sauce over the chicken. This will allow you to have extra sauce to coat the chicken during cooking if you wish.
