Hey!My name is Molly Leonard, I’m a cookbook creator, blogger, photographer and author what did molly do. My favorite things to make are desserts and snacks, both delicious and healthy. Because life is all about balance, right? !

One of the ways I like to eat a balanced diet is with snacks to curb my cravings for something sweet, but without any sugar or fat. There’s nothing like a sweet popsicle to end the night watching Netflix! This is exactly what I need to stay on track throughout the week.

So, I want to share with you a simple and easy trick to achieve this. Introducing Blueberry Basil Popsicles! Besides looking and sounding super pretty, they’re also packed with flavor. Blueberries are the base of this dish and they really dominate most of the flavors. They also provide many health benefits, including antioxidants, fiber, vitamin C, and more.

bonus! These Blueberry Basil Popsicles are also vegan, gluten-free and paleo! Because all three of these ingredients are complete and natural, they’re perfect for any and all restrictive diets. I’ve been on a paleo diet for a long time and would have loved it if I had come up with this recipe back then! So hopefully this makes all Paleo fans happy!

Blueberry flavors complement the earthy and aromatic basil. I absolutely love basil! It pairs perfectly with many fruits, especially blueberries. That’s the perfect touch for these blueberry basil popsicles. Hence the name? .

I like the thin ones too, people go wow wow wow wow wow wow wow wow wow. They’ll be pleasantly surprised how delicious, sweet and refreshing they are! You can bask in all its glory knowing you only spent a few minutes creating it.

So what makes this blueberry basil popsicle recipe so easy?

All you need is a blender and popsicle molds! Add three ingredients. Yes, you only need three ingredients to make this healthy snack. Blueberries, Basil and Honey!

Blueberries and basil provide all the flavor, and honey adds extra sweetness to round it out. You just throw all three in a blender or food processor and pulse on high speed for a few minutes. I like to extend my blending time to really make sure the blueberries don’t have the skin on.

Once thoroughly mixed, simply pour them into popsicle molds and place them in the freezer for about 3 hours or overnight. They’re completely frozen through, and you get a fun popsicle that you can gift to your family, friends, and especially your kids!

Here’s a Pro Tip: Run popsicle molds under hot water before attempting to pull popsicle molds out. The popsicles themselves may have frozen onto the molds, so by running them carefully in hot water, you can melt the edges and allow the popsicles to pull apart.

From there you can gently pull up on the popsicle sticks and they should slide right out. Serve and enjoy!

You can also store them in the fridge for up to 3 months and eat them occasionally. This time I did it with full intention, but they disappeared within 3 days. Good thing they’re easy to make again!
