Preheat the smoker to 275 degrees Fahrenheit. Prepare chicken according to all other instructions. Smoke at 275 degrees until the chicken reaches an internal temperature of 165 degrees F, which will take about 2 1/2 to 3 hours, depending on the size of the chicken.
Storage and Reheating Instructions:
Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in oven preheated to 325 degrees Fahrenheit. Wrap chicken in foil and reheat until heated through.
