Stuffed avocados are easily one of my favorite lunches. I made a few variations and they remain one of the most popular recipes on Full Time Chef. They’re easy to make, often healthy, and delicious. You’ll love this easy, healthy lunch!
What kind of chicken should I use?
For convenience, you can use canned chicken pieces, shredded rotisserie chicken, or shredded leftover chicken in this recipe. Feel free to leave the chicken out of this recipe if you want it vegetarian.
Why is your balm so thick? How can I achieve this?
If you want a thicker vinaigrette, you can buy a balsamic glaze that comes in a squeeze bottle, or thicken your own by boiling the vinaigrette for a few minutes until it reduces and starts to thicken.

- 2 avocado Halving and pitting
- 9 ounce shredded chicken
- 5 ounce Fresh Mini Mozzarella Balls
- 1 cup cherry tomatoes stationed
- 1/2 cup fresh basil leaves Chiffon
- salt and pepper to try
- 1 tablespoon Drizzle with vinaigrette

Scoop out some avocados from the pitted area to enlarge the “bowl” area. Place scooped avocados into a medium mixing bowl. Mash with a fork.

Add chicken, mozzarella, tomatoes and basil. Season with salt and pepper. Stir them together until everything is well combined.

Spoon mixture into avocado bowls.Drizzle with balsamic or balsamic glaze
