We’ve shown you how to make the most decadent Italian-style homemade hot chocolate, but today we’re taking it a step further with a caramel cinnamon hot chocolate that will blow your mind! It’s super indulgent and absolutely delicious. It all starts with cinnamon-infused homemade caramel. Homemade caramel can be a little intimidating, but fear not. We are here to hold your hand every step of the way!
How to make caramel:
Caramel is just sugar that, when melted and heated, breaks down the molecules and forms new semi-solid compounds. This is science at its most delicious!
To make caramel, you start by putting sugar in a saucepan over medium or low heat. It’s important to stir constantly while heating the sugar so it doesn’t burn. The sugar will clump at first, then slowly turn into a liquid. With continued heating, the liquid will turn a golden brown, often referred to as a caramel color. At this point you have liquid caramel. When caramel reaches different specific temperature points, it reaches different stages of solidification, from liquid syrup (110°C/230°F), to soft balls (113°C/235°F), like chewy caramel Candy-hard ball (113°C /235°F), to hard crackle stage (146°C /295°F).
In this recipe, cinnamon is added to the caramel by caramelizing the sugar with two cinnamon sticks. The sugar takes on a cinnamon flavor as it caramelizes. cool right?
Milk options for Caramel Cinnamon Hot Chocolate:
If you don’t drink dairy, you can use your favorite lactose-free or plant-based milk substitute. For best results, use a higher-fat milk alternative, such as oat or soy milk.

Storage and Reheating Instructions:
Refrigerate leftover hot chocolate for up to 4 days. Reheat in a saucepan on the stovetop over medium-low heat until heated through.

- 2/3 cup granulated sugar
- 2 large cinnamon stick
- 4 1/2 cup whole milk
- 8 ounce Bittersweet Chocolate Chopped

Pour the sugar into the bottom of the saucepan and turn the heat down to medium. Add cinnamon sticks. Stir the sugar constantly with a rubber spatula until it melts and turns a nice caramel color, about 5 to 7 minutes.

Remove cinnamon sticks and discard. Pour in 1/2 cup whole milk. The caramel will stick a little bit, but keep stirring. Slowly pour in the milk, stirring constantly. When the milk is warmed over medium heat, the caramel will start to dissolve.

Once the caramel is dissolved and the milk is heated, add the bittersweet chocolate until melted.

Pour the liquid into a blender. Make sure it comes off the top so the pressure doesn’t build, and blend for 60 seconds until smooth. Serve hot.
