Foil packets, also known as foil dinners, are the perfect summer meal. You put it together ahead of time and cook when you’re ready. They can be cooked in the oven, on the grill, or even over an open fire, which makes them great for camping. You know those grills in the park? These are perfect for them too! This recipe is really all about the sauce though. This delicious ranch sauce tenderizes meat and brings lots of flavor to chicken and vegetables. Who doesn’t love ranch? This is a classic flavor combo for a reason.

Vegetable options for Cheesy Ranch Chicken Foil Packets:

This recipe is also easy to customize for picky eaters. You can mix and match vegetables to your liking. The key is to make sure that the vegetables you are using are cut into pieces that can be cooked within the stated cooking time.options include

  • broccoli (cut small)
  • Potatoes (diced or thinly sliced)
  • zucchini
  • mushroom
  • bell pepper
  • Shallot
  • asparagus (thin)
  • whole garlic clove

Potato Tips:

Red and gold potatoes with edible skins are best for foil wrapping. When using potatoes, be sure to cut them into small pieces (less than 1/2 inch) so they cook at the same rate as the chicken. Alternatively, you can also slice them thinly. If you leave the potato chunks too large, you’ll be left with a portion of crunchy raw potatoes, which no one likes.

Campfire Cooking Instructions:

Cook over hot coals for 20-30 minutes, turning once halfway through, until meat is cooked through and vegetables are tender.

Storage and Reheating Instructions:

Store any leftovers in an airtight container, or in the refrigerator for up to 5 days if the foil is still in one piece. If using for storage, remove from foil and microwave in 30-second increments for about 90 seconds.

  • 4 Boneless Skinless Chicken Breasts
  • 3/4 pound red potatoes thinly sliced
  • 1 red bell pepper diced
  • 1/2 Shallot diced
  • 2 cup broccoli
  • 1/4 cup ranch dressing
  • 1 tablespoon olive oil
  • 2 tablespoon Worcestershire sauce
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon sugar
  • 1 1/2 teaspoon lemon juice
  • 1/2 cup grated Parmesan cheese

  • Place 4 sheets of aluminum foil, each approximately 14 by 18 inches. Place 1 chicken piece on each piece of foil. Place potatoes, red bell peppers, onions, and broccoli in foil packets next to chicken.

  • In a small mixing bowl, whisk together the ranch dressing, olive oil, Worcestershire sauce, salt, pepper, sugar, and lemon juice. Drizzle mixture evenly over each foil packet.

  • Sprinkle Parmesan cheese over chicken and vegetables. Wrap foil packet to close.

  • Oven: 375 degrees, 35-40 minutes; BBQ: 400 degrees, 20-25 minutes.
