Chili-Lime Baked Chicken Tenders take a classic flavor combination and mash it with a kid’s favorite for an adult version of chicken tenders that will have you licking your fingers! This easy dinner will be a hit with the whole family!

This recipe, like many, popped into my head… while wandering the isle of grocery stores. This happened to Costco. I found myself with an abundance of chicken tenders in my shopping cart. It’s Costco so you know it’s enough to feed my little family chicken feet for a week. Let me tell you, they won’t complain. I experimented a little with various versions of chicken fingers that the adults and kids in the family loved alike.

raw material

  • 4 lime
  • 2 pound chicken tenders
  • 1 1/2 cup panko bread crumbs
  • 3 teaspoon Ancho Chili Powder Divided into
  • 3/4 teaspoon Salt Divided into
  • 1/2 cup butter melted
  • 1/2 cup greek yogurt

instruct

  • Preheat oven to 375 degrees. Spray a 4-sided baking pan with nonstick spray.

  • Peel the limes, then place the zests in a small mixing bowl. Add breadcrumbs, 1/2 teaspoon salt, and 2 teaspoons paprika. Toss together.

  • Squeeze the juice of 3 limes into the butter.

  • Working one at a time, dip the chicken tenders into the butter mixture and then into the breadcrumb mixture. Make sure each piece of chicken has a nice coating of breading.

  • Bake in the preheated oven for about 30 to 40 minutes.

  • While the chicken tenders are grilling, make a dip by combining the Greek yogurt, juice of 1 remaining lime, 1 teaspoon paprika, and 1/4 teaspoon salt. Stir together until combined.

  • Serve warm with dipping sauce.

Tip: I like to toast under the broiler for a few minutes to ensure a nice crispy crumb.
