We have a soft spot for chicken thighs. They are so good. The skin gets perfectly crispy and the meat is always tender and juicy…heavenly! They are super easy to make. We serve them with warm tortillas and veggies, we smear the tortillas in drippings on the plate, and… are you drooling?

Don’t think you can handle skin and bones? Think again my friend. These are great! With the popularity of chipotle in the food world, you should be able to find chipotle chili powder at your local grocery store. The picture above? It looked burnt, but it wasn’t at all. chipotle starts off very dark. It’s actually a very deep red. Chipotle chili powder has a nice smoky flavor that’s delicious and potentially addictive.

  • How do I know when the chicken is done?

    Chicken needs to be cooked to an internal temperature of 165 degrees Fahrenheit. For dark meat, we recommend cooking to 172 degrees for maximum flavor and juiciness.

  • Chicken Options:

    We highly recommend this bone-in skin-on chicken thighs recipe, but understand that not everyone likes this cut of chicken. If you can’t stand bones or skin, go ahead and use boneless skinless chicken thighs. You won’t get the same crispness without the skin, but you’ll still be able to maximize your flavor potential with all the spices and seasonings.

  • Storage and Reheating Instructions:

    Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until heated through for extra crispness, or in the microwave until heated through, in 30-second increments.

  • 8 chicken thigh
  • 2 teaspoon paprika
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon chili
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Salt
  • 3 tablespoon butter

  • Heat oven to 425 degrees. Spray a 9×13 baking dish with nonstick cooking spray.

  • Place chicken thighs, skin side up, in prepared pan.

  • Combine all spices in a small bowl. Sprinkle generously over meat.

  • Divide butter into 8 small pieces. Place 1 piece on each chicken thigh.

  • Bake for about 45 minutes.
