These sweet, smoky sweet potatoes are a healthy treat you can indulge in. We’ve been making them for years, and they’ve quickly become one of the most popular recipes on our blog. I understand why! These are a hearty vegetarian dinner, a tempting appetizer, and a delicious side dish. It can even be served as leftovers! These sweet potatoes are nothing like what you’re used to and can really liven up this orange potato.

Fun fact: What’s the difference between sweet potatoes and yams? Well, chances are you’ve never actually eaten yams! True yams are native to Asia and Africa and have purple, red, or white flesh with a dark black or brown rind. Those red-skinned, orange-fleshed “yams” you buy at the grocery store are actually sweet potatoes. Yes, I know they are often labeled as yams, but they are not. Something else in the store that looks more like a potato labeled sweet potato? Why yes, it’s sweet potatoes too! It’s just a different variety, much like russet or red potatoes. This recipe can be made with any type of sweet potato, but I prefer orange-fleshed sweet potatoes myself.

  • Can I use regular potatoes instead of sweet potatoes?

    We love the taste and the added health benefits of sweet potatoes, but you can definitely substitute any large baked potato.

  • Spinach optional?

    We know that not everyone loves their greens. If you don’t like spinach, you can omit it.

  • Storage and Reheating Instructions:

    Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave 30 seconds at a time, until heated through.

  • 4 medium sized sweet potatoes
  • 1 lime Juiced
  • 2 clove garlic minced
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 Adobo’s Whole Burrito minced
  • 2 cup fresh spinach
  • 1/2 cup chopped cilantro
  • 1 cup shredded mozzarella cheese

  • Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray. Wipe your sweet potatoes clean and place on a baking sheet. Bake in the oven until tender, about 1 hour. Actual baking time will depend on the thickness and size of the potatoes. If they are on the small side, start checking them after 40 minutes.

  • Remove sweet potatoes from oven and carefully cut in half. Scoop out the meat and place in a medium mixing bowl. Leave a bit of meat on top of the potatoes to make a wall. Set the skin aside.

  • After removing the meat, mash it all up in a mixing bowl. Add lime juice, minced garlic, cumin, paprika, and minced chipotle peppers and toss to combine. Stir in the spinach. The potatoes should still be hot enough for them to wilt while mixing.

  • Arrange the skins on a baking sheet. Fill them with the jalapeño sweet potato mixture, then top with cheese and cilantro. Put them back in the oven for about 20 minutes, until the cheese is bubbling and starting to brown.
