Instead of putting little bits of cookie dough in your ice cream, put some ice cream in your cookie dough! These delicious frozen sandwiches combine all the favorite comfort foods. They’re rich, creamy, doughy, chocolaty and sweet. You can also top it with your favorite ice cream!

Do I need to chill the dough?

Yes, for the ice cream to spread best on the dough, it should be chilled.

The dough in this recipe does not use eggs, so it can be eaten without cooking. If you are worried about the flour, you can toast the flour before using. Spread it out on a sheet pan and bake in a 350 degree oven for 10-15 minutes, or in a large skillet over medium heat for 5-7 minutes.

What kind of ice cream should I put in the middle?

This recipe works with your favorite flavors. I recommend things that go well with chocolate chip cookies like vanilla, cookies and cream, cookie dough, chocolate, or even caramel.

  • 1 cup salted butter melted
  • 1 cup brown sugar tightly packed
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 teaspoon vanilla extract
  • 1/2 teaspoon Salt
  • 2 1/2 cup all purpose flour
  • 2 cup mini chocolate chips
  • 3 quart Vanilla ice cream

instruct

  • Line a baking sheet with parchment paper.

  • In a large mixing bowl, whisk together melted butter, brown sugar, and granulated sugar. Stir in milk, vanilla extract, and salt. Stir in flour with a rubber spatula until fully combined. Then stir in the chocolate chips.

  • Transfer cookie dough to prepared baking sheet and flatten to 1/4-inch thick. Use another baking sheet to press down into desired even layer.

  • Freeze the cookie dough on a baking sheet for 1 hour, until frozen.

  • Remove frozen cookie dough from pan and cut in half.

  • Scoop vanilla ice cream over half of cookie dough to form a thick, even layer. Top with remaining cookie dough.

  • Freeze for 4 hours until firm.

  • Cut into individual servings and serve immediately or package in resealable plastic bags for long-term freezer storage.
