These are perfect for tea parties, baby showers, brunch, or just as a regular old fashioned treat. We’ve dipped these cookies in melted chocolate, but you don’t have to dip them in chocolate at all, either. It adds a fun and fancy finishing touch and a higher chocolate content, but you can also eat these cookies as is.
Do I need a stand mixer to make chocolate chip shortbread cookies
You will need a hand mixer or stand mixer for this recipe to whip the butter and powdered sugar well.
Chocolate Chips:
We love adding chocolate chips to our shortbread cookies, but you can also make regular shortbread cookies without them.
Can I use cookie cutters?
These cookies retain their shape, which means you can cut them into squares or rectangles as shown, or you can use cookie cutters to create your own shapes. Smaller cookie cutters may require slightly shorter cooking times, so be sure to watch carefully.

- 1 cup butter soften
- 2/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 cup all purpose flour
- 3/4 cup mini chocolate chips
- 8 ounce Melted Chocolate Wafers

In a large mixing bowl, using a hand mixer, beat together butter and powdered sugar until light and fluffy. Add vanilla extract and beat until combined.

Add flour and mix until flour disappears. Add mini chocolate chips.

Transfer dough to a gallon-size resealable plastic bag, or place between two layers of plastic wrap. Roll until 1/4 inch thick. Refrigerate on a flat surface until firm, about 1 to 2 hours.

Remove the dough from the plastic and cut into equal-sized squares or rectangles with a butter knife. Transfer the cut pieces to a baking sheet lined with parchment paper.

Bake at 325 degrees for 18-20 minutes, until the edges are just lightly kissed by brown.

Microwave 30 second at a time, dipping chocolate into a small microwave-safe bowl while stirring. Dip the cookies in the chocolate, covering 1/3 or 1/2 of the cookies, then transfer to parchment paper to firm up.
