Chocolate Marshmallow Chubbies are a cross between a brownie and a cookie, filled with rich chocolate marshmallow goodness!

This recipe was actually inspired by one of my favorite TV shows…goldbergs. It’s about a family that takes place in 1980, and it’s hilarious. In one episode, they mention that Chocolate Marshmallow Chubbies are their family’s favorite cookie. Of course, I immediately went online and found no recipe! I knew I had to go about creating my own. It took several rounds of testing to get this cookie just right. It’s like a cookie, but with the texture of a fudge brownie, mixed with some melted chocolate and marshmallows. It was absolutely heavenly!

How do I make my cookies thick and tall?

For taller biscuits, you will need to chill the dough and let the butter in it harden before baking. You can bake them right away, but they will spread out and become thinner cookies. For best results, take time to cool the cookies before baking.

You can freeze your marshmallows! This will prevent them from spreading and melting too much in the cookie. Take them out of the refrigerator before putting in the dough. If you choose to freeze your marshmallows, store them in a small tray or plate instead of freezing them all in one lump.

raw material

  • 1 cup salted butter soften
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 big egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon Salt
  • 2 cup all purpose flour
  • 2 cup milk chocolate chips
  • 2 cup Frozen mini marshmallows or marshmallow cubes


  • Preheat oven to 325 degrees. Line two baking sheets with parchment paper or silicone baking mats.

  • Using a stand mixer or hand mixer, cream together the butter, sugar, and brown sugar.

  • Add eggs and vanilla extract and mix well.

  • Add cocoa powder, baking soda and salt.

  • Stir in flour with a spoon or rubber spatula until combined. Stir in the chocolate chips and marshmallows.

  • Scoop out about two tablespoons of cookie dough, roll into a ball, and place on prepared pan. Repeat with remaining dough until you have 24 cookies. Chill in the refrigerator for 30 minutes.

  • Bake in preheated oven for 12 minutes. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
