I have a solo love affair with pizza. I may or may not be the forever 5 year old at heart. When it comes to food, I probably have a lot of affairs. The best pizzas are made in a pizza oven. Sometimes I feel a little sad that I can’t install a pizza oven in my house. The pizza oven is hot, over 800 degrees. Practice is the only way to perfection. In the house where I learned to slide pizza, there were many expletives. While practice has greatly improved my “pizza slides,” I highly recommend using my “Perfect Frozen Pizza’ method, and then you’ll never have to worry about getting your pizza on the rocks again. 4. Cook until the cheese starts to turn brown. Don’t worry about the crust burning underneath. Go cheese. You’ve reached a delicious point when the cheese starts to bubble and brown.

  • 2 Unbaked 16″ Pizza Crust
  • 1 bunch of cilantro
  • 1 4 oz canned green chiles
  • 2 lime Juiced
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon Salt
  • 4 cup shredded mozzarella cheese
  • 1 chicken breast cooked and diced
  • 1 sweet onion diced

  • Place the coriander leaves, green chilies, lime juice, cumin, paprika, red pepper flakes, and salt in a food processor or blender and pulse until smooth.

  • Spread the cilantro-lime dressing on the prepared pizza crust.

  • Add the diced chicken and spread evenly over the pizza.

  • Top with an even layer of mozzarella cheese.

  • Sprinkle diced onions over pizza.

  • On a preheated pizza stone, bake in the oven on the highest possible heat (mine is 500 degrees) for about 10-12 minutes, until beautiful brown bubbles appear on the cheese.
