Summertime always seems to be filled with delicious pasta salads. I’m a big fan. They’re perfect for picnics, barbecues, and potlucks (unless they’re a mayonnaise-based food safety nightmare!). I love using orzo in pasta salads. It’s not like your traditional shells or elbows, it looks fancy and upscale.

I developed this pasta salad with summer in mind. I love all the delicious baby tomatoes that are in season right now. Hope you have a garden with cherry tomatoes because we all know garden fresh is best when it comes to tomatoes. If any of them made it inside without being eaten, this would be the perfect way to enjoy them.

Cilantro Lime Dressing is easy to whip up and light and delicious. Oh, and it’s definitely food safe to take to outdoor events. This is always important in summer! Did I mention you can also whip this together in under 15 minutes? Yep, that’s pretty much everything I look for in a recipe for a picnic, potluck, or BBQ.

raw material

  • 8 ounce. barley pasta
  • 2 lime Juiced
  • 1/4 cup Extra virgin olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon Salt
  • 1 bunch of cilantro Chopped
  • 1 bunch of green onions slice
  • 1 red bell pepper Seed and Dice
  • 1 pint grapes or cherry tomatoes cut in half
  • salt and pepper to try

instruct

  • Cook orzo according to package directions. Rinse with cold water and set aside.

  • Make the dressing in a small bowl by whisking together lime juice, olive oil, onion powder, garlic powder, and salt. Stir in the cilantro and pour over the cooked orzo.

  • Toss pasta with shallots, bell peppers and tomatoes. Season with salt and pepper. Refrigerate until chilled and/or ready to serve.
