Cilantro Ranch Pasta Salad is light, refreshing and delicious. Ready to prep and eat ahead all week, it’s a fun way to change up your pasta salad game! Great for potlucks, picnics, and backyard barbecues.

We’re making the most of our summer at The Stay At Home Chef. Our family is always busy, making us often rummaging through the fridge 5 minutes before lunch, hoping to find something we can throw together quickly. Discovered pasta salads are a game changer, especially this amazing cilantro ranch dressing. We make a big batch on Sunday to eat all week! Summer Victory!

Can I add meat besides bacon?

You absolutely can! This dish is also great for adding any leftover grilled proteins: chicken, steak, or even tofu!

What other shapes of pasta can I use?

We love bowtie pasta in pasta salads, but you can use rotini, shells, radiators, or penne.

Do I have to use avocado?

We know the outside world has strong opinions about avocados, which is why avocados are totally optional in this dish. Add them if you like them, leave them out if you don’t.

bacon:

If you don’t want to make special bacon for this dish, go ahead and use store-bought precooked crumbled bacon. To replace it, you will need to use a total of 4 tablespoons of crumbled bacon.

What other types of cheese can I use?

We love sharp cheddar in this pasta salad, but if cheddar isn’t your thing, feel free to use any cheese you like. Other good choices include mozzarella (fresh mini balls or cubes), Monterey, or pimento cheese.

Optional add-ons:

If you want a heartier salad, add 1 can of black beans and 1 can of corn, all drained and rinsed.

Storage Instructions:

Store any leftovers in an airtight container in the refrigerator for up to 4 days. Besides that, the vegetables will get soggy.

spaghetti

  • 1 pound Bow Tie Pasta
  • 8 ounce cherry tomatoes cut in half
  • 8 ounce cheddar cheese cube
  • 1 english cucumber cut into pieces
  • 1/2 Shallot cut into pieces
  • 4 slice cooked bacon crush
  • 1 avocado cut into pieces

Cilantro Ranch Dressing

  • 16 ounce green salsa
  • 1 cup mayonnaise
  • 1 bundle coriander
  • 1 lime Juice (about 2 tbsp)
  • 1 tablespoon Garlic
  • 1 tablespoon onion powder
  • 2 teaspoon Salt
  • 1 teaspoon Black pepper

  • Cook pasta according to package directions. Drain and rinse with cold water until the pasta is cool.

  • While the pasta is cooking, halve the tomatoes, cube the cheese, chop the cucumber, dice the onion, and crumble the bacon.

  • Make the dressing by adding the green salsa, mayonnaise, cilantro, lime juice, salt, garlic powder, onion powder, and black pepper to a blender. Blend until smooth.

  • In a large bowl, toss together pasta and dressing until pasta is fully coated. Top with tomatoes, cheese cubes, cucumbers, red onions, and bacon crumbles. Avocado is optional, but if added, add just before serving.

  • Serve immediately or cover and refrigerate until ready to serve.
