I’m so excited to share my thoughts on food like these delicious ice cream sandwiches on Rachel’s blog. With the last days of summer fast approaching, I’ve got the perfect ice cream recipe to feast your eyes on. These cinnamon roll ice cream sandwiches are easy to make and look delicious too. They won’t be disappointed.

The cinnamon roll dough is sandwiched between two sheets of parchment paper and flattened.

Let’s face it, it’s hot outside and the last thing you want to do is spend hours in the kitchen making your own cinnamon rolls. Or worse, run the oven! Poolside, or even outdoors, is a better option. This recipe uses a can of cinnamon rolls for a gooey frosting that you, the kids, or anyone can enjoy. They are very easy to make. Plus, there are waffles, so this recipe pretty much counts as breakfast, right?

Cinnamon Roll Ice Cream Sandwiches made in waffle molds are a decadent, easy-to-make dessert that the whole family will love!

  • 1 12.4 oz canned cinnamon rolls
  • 1 pint Vanilla ice cream
  • cooking oil


  • Open the tin of premade cinnamon rolls, separate each individual cinnamon roll, and place them all on a sheet of parchment paper.

  • Spread another layer of parchment on top, and press down on each roll, flattening it to about half its height. By doing this, it’s easier to make waffle rolls that are the same size and then just mash them in the waffle iron.

  • Preheat your waffle iron and coat each side of the press with some cooking oil.

  • Place one of the crushed cinnamon rolls in the press and cook in the iron for about 2 minutes or until the cinnamon rolls are fully cooked. Do not shred the roll further during this process. Also, maybe brush a little oil on the rolls if they stick. Because they are “rolled up”, they like to unravel.

  • Place all cooked rolls in the refrigerator for 30 minutes to cool completely.

  • Match waffle rolls by size, then top one half with a generous scoop of vanilla ice cream.

  • Mash up the ice cream with a spoon and spread it over the waffle cinnamon rolls. Top with another roll.

  • Place ice cream sandwiches in the freezer for at least 30 minutes before serving.

  • Sprinkle the top with the icing from the package when serving.
