In addition to these delicious recipes, I’m sharing a classic breakfast today. Cinnamon Toast Crunchy Breakfast Casserole is not your run of the mill breakfast casserole. super special. Because the topping is made with cinnamon toast crumbs! I love a savory crumble any day of the week, but when it comes to one of my favorite cereals, I love it 24/7.
This cereal really brings me back to my childhood, as my sister and I would have a big bowl (or 10) of it every morning before school. Usually watch the bell save at the counter. It’s such a classic cereal. Because French toast is such a classic breakfast recipe, it only made sense to combine the two.
The bottom of the casserole starts with crusty bread. I used salad here. It’s thick and buttery, perfect for the liquid ingredients in this recipe. Even better if you leave it out for a day or so to get a little crusty. Cut it into one-inch cubes and pour into the casserole.
The next step is to make the typical liquid ingredients for French toast. Mix eggs, milk, cinnamon, etc. and pour over the bread. This is where the casserole differs slightly from typical French toast! The small loaf soaked up all the delicious liquid overnight.
This step is one of the main reasons I love making this recipe. You can easily throw this together ahead of time and put it in the fridge overnight, so all you have to do in the morning is heat up the oven and bake.
But, before you do that. You have to add the stars of this recipe! collapse. It’s made with traditional crumble ingredients and cinnamon toast shortbread. It brings so much texture to this breakfast casserole!
Bake in the preheated oven for 44-55 minutes and you’re ready for a delicious morning. I like to bake mine for the shortest time because I like it a little softer. Best served hot!
Add fresh fruit, syrup or powdered sugar and you’re done!

Make Ahead Tip: To make the entire casserole, cover with plastic wrap and refrigerate for up to two months. Simply thaw overnight in the refrigerator, then bake at 350 degrees for 35 minutes. That means you can make this recipe today and freeze it for Mother’s Day 🙂 Just a thought!
