- 4 cup Waxy Potatoes cut into 1/2-1/4 inch pieces
- 6 tablespoon salted butter
- 1 rhubarb onion fine cut
- 1 tablespoon minced garlic
- 4 cup corned beef cut into 1/2-1/4 inch cubes
- salt and pepper to taste
- coriander optional, for decoration
Bring a pot of water to a boil and add the diced potatoes. Cook for 7-8 minutes, then drain and pat dry.
In a large skillet, melt butter over medium-high heat. Add diced onion and cook 5 minutes.
Add minced garlic and sauté 1 minute more.
Add potatoes and corned beef to skillet and toss gently to combine.
Reduce the heat to medium and use a spatula to break up the hash into small pieces if needed. Press the mixture down into the skillet to ensure even browning. Cook without stirring for 7-8 minutes.
