The secret to making this recipe so delicious is the Parmesan Ritz topping. Seriously though, we love everything about this dish. You won’t find any cream here because we keep it old school with this from-scratch sauce, just like your mom made it.

If you’ve never made a sauce from scratch before, you’ll be surprised how easy it is. You’ll start with the roux, which is a 50/50 mixture of fat and flour (not to be confused with a puree or gravy), which you’ll then add to your liquid of choice. Depending on the recipe, chicken and beef broths are common, however, we often find ourselves reaching for a carton of milk.

Pro tip: Be sure to let the butter and flour mixture cook for 1-2 minutes before adding the broth. Raw flour does take time to cook for the best flavor. Also, don’t rush to pour in chicken broth and milk. believe us.

  • Do I have to use Ritz cookies?

    No, you really don’t know. You do want to use some kind of butter biscuit though. Are you eating as organic as possible? Grab some classic late July cookies! Want to stretch your dollar even further? Nothing is missing from generic store brands! Use what works best for your family.

  • Can Creamy Chicken Casserole be served with any other type of pasta?

    This recipe uses egg noodles, but we’re a big believer in using as much of what you have on hand as possible without sacrificing the intent of the recipe. Any short tubular pasta would work well here: Penne, Rigatoni, and Ziti are good examples. These pastas can handle thick sauces.

  • My kids hate peas. Can I use different vegetables?

    We’ve all been there. Picky eaters can make or break family meals. Broccoli is a great substitute for this casserole. Simply steam the broccoli florets before adding the chicken.

  • 12 ounce egg noodles
  • 1/4 cup butter
  • 1/2 diced white onion
  • 3 clove garlic, minced
  • 1/4 cup flour
  • 2 cup chicken soup
  • 2 cup milk
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 cup frozen peas
  • 1 pound boiled diced chicken
  • 2 cup shredded cheddar cheese
  • 1 cup Crushed Ritz Cookies
  • 1/4 cup grated Parmesan cheese
  • 2-3 teaspoon olive oil


  • Preheat oven to 400 degrees and lightly grease a 9×13 pan. Cook egg noodles according to package directions. Drain the pasta and pour it into the prepared pan.

  • Meanwhile, melt butter in a medium saucepan over medium heat. Add onion and sauté 5 to 7 minutes, until softened. Add garlic and flour and cook 1 minute. Slowly pour in the chicken broth and milk, season with salt and pepper, and bring to a simmer, stirring constantly.

  • Once the mixture has thickened, stir in the peas, cheddar and chicken. Turn off the heat and stir until the cheese is melted. Pour pasta into 9×13 pan.

  • In a small bowl, use a fork to combine the crackers, Parmesan, and olive oil. Sprinkle over pasta.

  • Bake in the preheated oven for 15 to 20 minutes, until the cookies are lightly browned. Serve hot.
