Creamy Spinach Tomato Gnocchi Soup An easy soup recipe that takes just 15 minutes to make, it’s pure comfort food.

This creamy soup is dreamy. Our family is a big fan of soup in the winter, especially when we add gnocchi. Gnocchi makes this soup extra hearty and delicious. This soup is vegetarian and you won’t even miss the meat. It only takes 15 minutes to make, and it’s a great weeknight meal for those colder months when you need a quick and easy but totally delicious meal.

Can I add meat to Cream of Spinach and Tomato Gnocchi Soup?

We think this soup is perfect on its own, but you can always add cooked shredded chicken to this soup. We especially like using shredded rotisserie chicken.


We highly recommend using baby spinach in this recipe. Baby spinach is harvested early in the growing process, so it’s smaller and has thinner stems. This will provide a more pleasing result in soups, making the spinach easier to swallow.

Heavy Cream Substitute:

The cream is what makes this soup so thick and luxurious, but if you want a lighter soup, you can substitute half and half.

Traditional gnocchi is made with just four ingredients: potatoes, all-purpose flour, salt, and eggs.

Gnocchi making is much like pasta making, almost an art form. Prepackaged gnocchi is becoming more and more popular.

Where can I buy gnocchi?

Packaged gnocchi are sold in many grocery stores in the pasta or Italian section of your supermarket. Sometimes it’s in the same general shelf space as dried pasta, and other times it’s in the Italian specialty section, where you’ll see higher-end or imported products.

Storage and Reheating Instructions:

Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in a skillet on the stovetop over medium-low heat until heated through.

  • 2 tablespoon olive oil
  • 1 white onion diced
  • 5 clove garlic broken
  • 1 (28 oz) yes diced tomatoes
  • 2 teaspoon italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon Salt
  • ¼ teaspoon black pepper
  • 3 cup chicken soup
  • 1 (1 lb) bag Gnocchi
  • 2 cup baby spinach
  • 1 cup heavy cream
  • 1/4 cup grated parmesan cheese Elective


  • In a large skillet or pot, heat olive oil over medium-high heat. Add onion and sauté until soft and translucent, about 5-7 minutes. Add garlic and cook 1 minute more.

  • Add Italian seasoning, basil, salt, pepper, diced tomatoes, and chicken broth. Bring to a boil, reduce heat to medium-low, and simmer for 5 minutes.

  • Add gnocchi, spinach, heavy cream, and grated Parmesan (if using). The residual heat will cook the gnocchi and wilt the spinach.

  • Serve hot.
