Creamy Sun Dried Tomato Chicken is a quick and easy one pot recipe with a delicious sauce that will have you licking your fingers! Best served with pasta, brown rice or quinoa.

This recipe is one of our favorite dinners and the family can’t get enough of it every time I make it. Chicken thighs and sun-dried tomatoes in the most delicious, creamy, garlicky sauce, what’s not to love? I didn’t even need any side dishes because that sauce was enough for me to lick the pan clean!

It’s really easy, and the one pan recipe makes us love this even more, because who doesn’t like easy cleanup? ! And because the ingredients list is so minimal, this creamy sun-dried tomato chicken doesn’t require much planning. As long as you have some sun-dried tomatoes and chicken in olive oil lying around, you’re good to go.

  • Chicken Options:

    We love this bone-in chicken thigh recipe, but you can always use chicken breasts. Bone-in is always tastier, but you can also use boneless.

  • Sun-dried tomatoes:

    We use a lot of sun-dried tomatoes in this recipe because when they simmer in this sauce, they become so soft, and their juice is what makes this sauce so delicious. Make sure to use canned or sun-dried tomatoes in canned oil.

  • Service suggestion:

    I love Creamy Sun Dried Tomato Chicken with Sautéed Brown Sugar Bacon Green Beans and Slow Cooker Mashed Potatoes, or you can serve it over pasta. It really just depends on your mood!

  • 6 boned Skinless Chicken Thighs
  • salt and freshly ground pepper to taste
  • 1 tablespoon olive oil from Tomatoes in Oil
  • 2 teaspoon butter
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon chilli flakes
  • 1/2 cup sun dried tomatoes roughly chopped
  • 3/4 cup chicken soup
  • 1/2 cup heavy cream
  • 2 tablespoon grated parmesan cheese


  • Season chicken thighs with salt and pepper.

  • Melt butter in a skillet over medium-high heat, then add chicken thighs. Fry for 3-4 minutes on each side.

  • Remove chicken from pan and set aside.

  • In the same pan heat the olive oil and add the garlic, thyme and chili flakes. Saute for a minute or two and add the sun-dried tomatoes, chicken broth, salt and pepper.

  • Return the chicken to the pot, cover and cook for 20-25 minutes, until the chicken is cooked through. Check after 15 minutes and add a little more broth if necessary.

  • When the chicken is cooked through, add the heavy cream and Parmesan and simmer for a minute or two, then turn off the heat. Serve immediately.
