I absolutely love tarragon. It has a tasteful gourmet flavor that truly “wows” people. If you can’t find fresh tarragon at your local grocery store, you can always use the dried variety. It will still have a beautiful anise-like flavor. This dish is ready in less than 30 minutes too! Serve it over some linguine and you have a dinner that will make your soul happy.

Our family has enjoyed this dish for years. The chicken is smeared with Dijon mustard for a rich texture. The tarragon cream sauce takes it into truly savory territory. Seriously, guys, this is one of my favorite pastas ever!

raw material

  • 4 chicken breast Pound
  • 4 tablespoon Dijon mustard
  • salt and pepper to try
  • 2 tablespoon olive oil Divided into
  • 1 pound mushroom slice
  • 4 shallots diced
  • 3 clove garlic minced
  • 2 cup heavy cream or half and half
  • 1/4 cup fresh tarragon Chopped

  • Brush both sides of chicken breasts with Dijon mustard. Season generously with salt and pepper.

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the chicken breasts until the internal temperature reaches 165 degrees, turning halfway through. If using thin chicken breasts, this will take about 6 to 8 minutes.

  • Remove cooked chicken from skillet and set aside.

  • Using the same skillet, pour in the remaining 1 tablespoon of olive oil. Add mushrooms and shallots. Fry for 3 to 5 minutes. Add garlic and cook 1 minute more.

  • Pour in heavy cream and tarragon. Simmer until the sauce thickens, about 5 minutes.

  • Return the chicken to the sauce and let them heat through. Serve warm over cooked pasta.
