You have so many options here! Chow mein gives this dish a crunch. However, most Americans are used to soft lo mein or chow mein. You can find chow mein and lo mein in the Asian foods section of your grocery store, and chow mein in the refrigerated or frozen section. If you don’t have these available, you can use pasta.

  • Can I use red cabbage instead of green cabbage?

really. Both red and green cabbage work well in this recipe. Use whichever you like.

  • What pan do I use if I don’t have a wok?

Don’t have a wok? Don’t let that stop you from making chow mein! The nice thing about a wok is that it allows a lot of heat to rise up the sides of the wok, creating a lot of surface area for cooking. But if you don’t have a gas stove, you won’t really get those benefits anyway. All you really need is a wide-bottomed saucepan that gives you plenty of cooking surface area. Your largest skillet should do the job!
