Does fish need to cook for a certain amount of time? How do I know when it’s done?

The USDA recommends that fish need to be cooked to an internal temperature of 145 degrees Fahrenheit. However, some say the salmon is overcooked at this point. For medium to medium salmon cooking, use the time and temperature indicated, or remove from oven when salmon reaches an internal temperature of 125-130°F and let rest 5 minutes.
