Rice pilaf is one of those dishes that is so satisfying, it’s hard to believe how easy it is to make! Here at Stay at Home Chef we affectionately call it cheese rice. It’s easy to make and incredibly delicious. Everyone gobbles it up and always asks for seconds. This is a side dish that goes with almost every recipe. chicken? Yes! fish? really! Hamburger? certainly! It can be used with almost anything. And because it’s so easy to make, it’s often on the dinner table. One of the best parts about this cheesy dish is that you only need a handful of pantry ingredients (plus butter and Parmesan) to make it. Two cups of rice may seem like a lot, but we almost always scrape the bottom of the pan for every last bit of goodness. When was the last time you made that with rice? What makes a pilaf a pilaf?

There are many ways to prepare rice, and pilaf is just one of them. So, what sets it apart? Cooking methods! Pilaf is prepared by cooking rice in a broth (usually chicken or vegetable) instead of plain old water. Other ingredients are often added, such as spices, butter, and cheese.

How do you melt cheese in rice?

It’s all about timing! It is best to add cheese to this dish just before serving. If you don’t, you could end up with burnt results that stick to the pan. Once your rice is cooked in the broth, remove it from the heat. Add your Parmesan, stir, and serve with your choice of entree!

You can easily make this recipe vegan! Just replace the chicken stock with vegetables. If you’re vegan, you can also use plant-based butter and cheeseā€”nutritional yeast is a popular substitute for Parmesan. So many options today!

You can technically use any type of rice to make cheesy rice pilaf, but we like long-grain white rice best. choose:

  • Basmati
  • jasmine
  • American white rice (unflavored)

Basmati and jasmine rice do have a slightly nutty or herbal flavor, but you can’t really taste it once you add the butter and parmesan.

Troubleshooting: Why is my rice mushy?

It is very important to follow the directions for this recipe exactly or you may end up with mushy rice! While cheesy and mushy rice isn’t the worst thing in the world, no one likes a super sticky result. If you use too much broth or if you don’t pay close attention to the cooking time, you can end up with mushy rice. Make sure to use the correct amount of rice and broth and follow the cooking instructions as written.
