Hey!This is Richa from my food story Today I have a super easy corn casserole recipe for you that is the perfect side dish.

Corn casserole has a creamy perfection that everyone loves. It has just the right amount of sweet and savory flavor and only requires five ingredients. However, as always, I like to add some chopped jalapenos to my corn casserole and a little lime when serving. It adds a little heat and the lime juice helps sweeten it. In my opinion, this corn casserole is really perfect.

The easiest way to make corn casserole is to make your own Jiffy cornbread mix, as this really cuts down on the ingredient list. Then you just mix everything with butter, creamed corn, corn kernels, eggs, sour cream, and jalapeños. you are done! Bake for about 50-55 minutes and you’ll have a corn casserole with a perfectly golden brown crust.

This recipe probably got it from the back of a Jiffy cornbread box a year ago because I don’t really remember where it came from, it was passed on to me by a friend. I have used other cornbread muffin mixes that work just as well as long as you follow the recipe.

Once you bake it, you may see a bit of butter on the sides, but when it cools a bit, all of the butter will be absorbed, giving you a delicious nutty flavor.

This recipe has a nice sweetness, but it’s not overly sweet. The jalapeños really add a delicious heat to it that isn’t spicy, but is somewhere in the background.

I have to tell you, if you’ve never tried a lime juice squirt, you’re in for a treat!Surprisingly, this works perfectly for my Instant Pot Beef Stew Recipe.

  • 14 ounce Canned Creamed Corn
  • 14 ounce canned corn kernels to drain
  • 8.5 ounce Corn Muffin Mix
  • 1 chili deseeded and chopped
  • 2 Egg tap
  • 1 sticky unsalted butter melted
  • 3/4 cup sour cream
  • pinch salt and pepper

  • Preheat oven to 325F

  • Combine all ingredients in a bowl until well combined.

  • Pour batter into casserole and bake for 50-55 minutes or until set.

  • Served warm.
