Cornish hen is a delicious dinner you can easily make at home. This recipe will be your secret weapon for any occasion you want to celebrate with a special yet totally simple meal. There’s no reason to be intimidated, it’s something any home cook can do. Cranberries and orange juice are combined in a cranberry glaze on the birdie, what a wonderful combination.

How many people does it serve? Each hen can serve up to 2 people, but you can also serve a whole hen per person for demonstration purposes. For two servings, use a sharp butcher knife to cut the hen in half and you’ll still have a nice presentation. They take 2-3 days to thaw in the refrigerator.

  • 4 cornish hen
  • 6 tablespoon butter
  • 2 teaspoon corn starch
  • 1 cup Orange juice
  • 1/2 cup Cranberry juice
  • 1 tablespoon brown sugar
  • 1 teaspoon dried rosemary
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

  • Preheat oven to 400 degrees.

  • Place thawed hen breast side up in a baking dish.

  • In a small saucepan, melt butter over medium heat. Stir in the cornstarch to form a paste. Pour in the orange and cranberry juices. Stir in brown sugar and rosemary. Increase heat to high and bring to a simmer. Simmer until thickened.

  • Brush the hen with the orange juice with all the liquid. Sprinkle salt and pepper over hen.

  • Bake in the preheated oven for 60-65 minutes, until the internal temperature reaches 165 degrees. For best results, coat hens with paste every 20 minutes.
