Easy Cucumber Salad is a family favorite recipe that people have been enjoying for years. Thinly sliced ​​cucumbers and onions are tossed in a sweet and tangy vinaigrette for a classic side dish.

Cucumber Salad is an absolute classic! This particular recipe has deep roots in German roots and they call it Gurkensalat. This is a popular side dish that has made its way to the United States. It’s light, refreshing, and easy to make. You may find two different versions of cucumber salad, one with a light vinaigrette dressing and one with a creamy dressing. This recipe is the light vinegar version. A creamy version of the sauce is made with sour cream, dill, garlic, sugar, and a dash of vinegar. Vinegar and cream versions are also common in Southern cooking. Although the recipe appears to have originated in Germany, it was brought to the American South through German immigrants. Sure, there are minor changes in there, but this version is our absolute favourite.

Which Cucumbers Should I Use For Easy Cucumber Salad?

English cucumbers have a stronger flavor and fewer seeds, making them perfect for this dish. If you don’t have English cucumbers, you can use regular seedless cucumbers. Since they are smaller, you will need to double your usage.

Sweating Cucumbers:

This recipe calls for the cucumbers to be “sweated.” When the vegetables sweat, you use the salt to suck out the excess moisture. This is usually done when processing eggplants. You can of course skip this step in the recipe, however, you will end up with extra liquid from the cucumbers which has a lot of water.

Onion Options:

Not only do they add some nice color, but red onions are also great for eating raw. Just be sure to slice them thinly. If you don’t have red onions, you can use white onions in a pinch, but the onion flavor will be more prevalent. Yellow onions are not recommended.

Can I use dried dill instead of fresh dill?

Fresh dill is highly recommended in this recipe. If you can’t find fresh dill or can’t get it, you can use dried dill. Use only 2 to 3 teaspoons of dried dill.

  • 2 english cucumber thin slices
  • 1 teaspoon Salt
  • 1 Shallot thin slices
  • 1 cup distilled white vinegar
  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 2 tablespoon fresh dill minced


  • Season cucumbers with salt in a large bowl and let sweat for 1 hour. Drain the liquid and toss with the cucumber and onion slices.

  • In a small saucepan over high heat, pour in the white vinegar and water, add the sugar and stir for 3 to 5 minutes until dissolved and the liquid runs clear.

  • Pour in cucumbers and onions. Stir in dill. Cover with plastic wrap and refrigerate for 1 hour. Serve cold or at room temperature.
