What temperature should lamb chops be cooked to?

Lamb needs to be cooked to a minimum internal temperature of 145°F. Lamb chops, in particular, are best served at this medium-rare temperature. It is not recommended that you cook them over medium heat (160°F) as the lamb will become al dente.
