What’s the best way to preheat tortillas for tacos?

If you like your tortillas more moist and springy, you can microwave them in small batches for 30 seconds at a time, then make sure to keep them in a covered container. On the other hand, if you prefer crisper tortillas, you can flip them on the grill or stove-top griddle until the edges are browned. I like to heat it up on the grill. Whichever you prefer, I recommend wrapping them in foil, or make sure you keep them in a container to keep them warm while you eat them.

Can I make the meat ahead of time?

Yes. I absolutely love meat fresh off the grill, but if time is tight, the meat can be made ahead and reheated. Reheating in the oven is best. Wrap the chicken in foil so it doesn’t dry out. Place in a 250°F oven until the internal temperature reaches 165°F.

Can I use chicken breasts instead of chicken thighs for chicken tacos?

Due to the flavor and moisture of the dark meat, we recommend using chicken thighs when making chicken tacos. Chicken thighs are also more difficult to dry when grilling. You can use boneless skinless chicken breasts instead of chicken thighs. To retain moisture, be sure to use a meat thermometer so you don’t overcook the meat, which can dry out the meat. Chicken breasts also cook faster than chicken thighs, so be sure to keep an eye on them and adjust cooking times accordingly.

Does the chicken have to be grilled? Can i do it on the stove?

Won’t. Chicken can easily be cooked on the stove. If preparing on the stove top, heat a heavy skillet over medium-high heat. Cook chicken for about 5-7 minutes per side, or until internal temperature reaches 165°F.

Storage and Reheating Instructions:

Store leftover chicken filling in an airtight container and refrigerate for up to 4 days. Reheat in a skillet on the stovetop over medium-low heat or in the microwave in 30-second increments until heated through.

  • 1/4 teaspoon chili
  • 4 clove garlic minced
  • 3 tablespoon lime juice
  • 3 tablespoon olive oil

  • 1/2 cup fresh chopped cilantro
  • 2 Moderate roma tomatoes diced
  • 1/2 Moderate Shallot diced
  • 1/2 cup shredded fresh cheese
  • 12 corn or flour tortillas

instruct

  • In a small bowl, combine garlic powder, salt, paprika, pepper, paprika, parsley, garlic, lime juice, and olive oil. Transfer chicken thighs to a shallow dish or plastic ziplock bag. Marinate for 1 hour.

  • Preheat an outdoor grill on high heat (400-500 degrees).
