The zucchini should cook on the grill over medium heat (about 350 degrees) for about 10 minutes, no matter how you cut the zucchini. It takes about 10 to 15 minutes for the zucchini to soften.
How long do zucchini skewers need on the grill?
Zucchini can be skewered and grilled on its own or with other vegetables. Zucchini takes 10 to 15 minutes to soften, so if you’re using other vegetables on skewers or meat, look for vegetables with similar cooking times, such as tomatoes, mushrooms, bell peppers, chicken, and steak beef.

How do you choose a good zucchini?
Look for size, color and stem. Small zucchini are better because large zucchini tend to be watery. When it comes to color, whether you’re picking green zucchini or yellow squash, look for bright colors. Finally, look for stems. Having lots of stems on the zucchini will help it keep longer.
