The secret to juicy grilled chicken breasts is cooking them over high heat, for short periods of time. Use a 100% accurate meat thermometer to make sure you don’t overcook and dry out your chicken.

Chicken thighs and drumsticks prepared this way bake beautifully. All you need to adjust is the cooking time. No matter which piece of chicken you use, you’ll want to make sure it’s still at an internal temperature of 165 degrees Fahrenheit.

You can make the marinade up to 8 hours in advance. We like to start it in the morning so it marinates all day and lets simply pop it in the oven!

raw material

  • 4 Boneless Skinless Chicken Breasts
  • 1/2 cup lemon juice
  • 2 tablespoon Extra virgin olive oil
  • 2 teaspoon lemon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ teaspoon Salt
  • 1 big lemon thin slices
  • 2 tablespoon fresh chopped parsley (optional)

instruct

  • Place the chicken breasts in a gallon-sized resealable plastic bag. Pour in lemon juice, olive oil, lemon pepper, basil, oregano, and salt. Shake slightly so all the chicken is covered.

  • Marinate in the refrigerator for 30 minutes or up to 8 hours.

  • Preheat oven to 450°F.

  • Remove chicken from marinade and place in a 9×13 pan. Discard any remaining marinade. Put lemon slices on top.

  • Cook the chicken for 18-20 minutes, until the internal temperature of the chicken reaches 165°F.

  • Serve hot. Garnish with fresh chopped parsley (optional).

If you want to add a little color to your chicken breasts, turn the oven setting to Broil when they’re done. Let the chicken broil for 2 to 3 minutes, until lightly browned.
