Chicken is the perfect choice for a quick meal and a healthy protein. It can be dressed up in many different ways, and we’ve certainly tried them all! We love this roasted lemon herb recipe because it takes next to zero prep time yet tastes like we spent hours in the kitchen. The lightness of the lemon and the heat of the lemon pepper blend perfectly, and it’s certainly a mystery how we manage to get so much flavor out of such a simple recipe.

Juicy Chicken Tips:

The secret to juicy grilled chicken breasts is cooking them over high heat, for short periods of time. Use a 100% accurate meat thermometer to make sure you don’t overcook and dry out your chicken.

Chicken Options:

Chicken thighs and drumsticks prepared this way bake beautifully. All you need to adjust is the cooking time. No matter which piece of chicken you use, you’ll want to make sure it’s still at an internal temperature of 165 degrees Fahrenheit.

Lemon Slices in Easy Lemon Herb Grilled Chicken Breasts:

Not only do the lemons add an amazing flavor to the chicken, but they taste amazing on their own as well. Try it and you’ll love the tangy lemon flavor!

Note in advance:

You can make the marinade up to 8 hours in advance. We like to start it in the morning so it marinates all day and lets simply pop it in the oven!
