  • 3 tablespoon Extra virgin olive oil
  • 3 garlic cloves minced
  • 1 teaspoon sugar
  • 1/4 teaspoon Salt


  • Preheat oven to 425 degrees Fahrenheit. For plum tomatoes, cut tomatoes in half lengthwise. For cherry tomatoes, keep whole.

  • Arrange tomatoes on an ungreased baking sheet. Drizzle with olive oil and sprinkle with garlic cloves. Season with sugar and salt and toss to combine. Unfold into a single layer.

  • Roast in the preheated oven for 15 to 20 minutes for cherry tomatoes and 35 to 40 minutes for plum tomatoes.
