Can I use milk powder that contains fat?
Yes. The recipe calls for skim because skim milk powder has a longer shelf life. You can also use whole milk powder, just make sure to label your pancake mix with the same “best before” date as the powdered milk container. Alternatively, you can omit the powdered milk and use fresh milk instead of water when preparing pancakes. In this case, the shelf life can be up to 18 months.
use a different type of flour
Whole Wheat or Buckwheat Flour: These flours are much heavier. If you plan to substitute whole wheat or buckwheat flour for all-purpose flour, increase the baking powder to 3 Tbsp.
Homegrown flour: Self-raising flour is a premade mixture of baking powder, flour, and salt. The ratio of baking powder, flour, and salt will vary depending on your location and the brand you buy. We don’t recommend using self-raising flour for this recipe, as it’s worth the minimum effort to measure out your own baking powder and salt to ensure the best results.
Gluten-free flour: To make this recipe gluten-free, substitute all-purpose flour for a gluten-free flour blend. Use a mix designed for direct replacement of all-purpose flour.
Yes. This mix is definitely plugin friendly. Once mixed, you can add half to a full cup of any fruit of your choice to the batter. We love blueberries, strawberries, raspberries and chopped apples. You can also use raisins, chocolate chips, currants, bananas, or chopped nuts.
