Can I use milk powder that contains fat?

Yes. The recipe calls for skim because skim milk powder has a longer shelf life. You can also use whole milk powder, just make sure to label your pancake mix with the same “best before” date as the powdered milk container. Alternatively, you can omit the powdered milk and use fresh milk instead of water when preparing pancakes. In this case, the shelf life can be up to 18 months.
