Pecan Sandwiches are an easy must-make for holiday cookies and only require a few ingredients. They are also known as Mexican Wedding Cookies. No matter what you call them, they are delicious!

You might recognize pecan sandwiches as Mexican wedding cookies, and that’s accurate because they’re the same. We love making pecan sandwiches for just about any occasion, but especially around the holidays. These cookies have a rich, buttery flavor, a crunchy, nutty texture, and aren’t as sweet as chocolate chip or sugar cookies. They’re a great addition to the biscuit assortment, with unique textures and flavors that can be slightly lower in sugar.

Is Easy Pecan Sandies dough supposed to be this crumbly?

Yes. These cookies should have a crumbly texture, similar to shortbread. The dough will come together just enough to form a spherical biscuit shape.

Should I refrigerate this dough?

You don’t have to refrigerate the dough for these cookies, but if you want the cookies to be more ball-like, you’ll need to chill the formed cookies for at least 30 minutes while the oven preheats. If you don’t refrigerate them, they will just flatten out a bit. They will still be delicious.

Nut Options:

Any chopped nut can be used in these cookies. Walnuts and almonds are especially good substitutes for pecans.

Or, if you’re allergic to nuts or just don’t like nuts in your baked goods, these cookies are still delicious without them.

Fill a bowl with pecan sand.

Storage Instructions:

Store your cookies in an airtight container on the counter for up to a week.

  • 1 cup butter
  • 1/3 cup granulated sugar
  • 2 teaspoon water
  • 2 teaspoon vanilla extract
  • 2 cup all purpose flour
  • 1 cup chopped pecans
  • 3 tablespoon powdered sugar for scrolling

instruct

  • In a large mixing bowl, beat butter and sugar until light and fluffy. Stir in water and vanilla.

  • Stir in flour and pecans to combine. Form dough into 1-inch balls. Line two lightly greased or parchment-lined baking sheets at least 2 inches apart.

  • Place formed biscuits in refrigerator for 30 minutes while preheating oven to 325 degrees Fahrenheit.

  • Bake in the preheated oven for 18 to 20 minutes, until lightly golden brown. Remove from oven and let cool completely on a baking sheet.

  • Roll cooled biscuits* in powdered sugar. Store in an airtight container. Cookies will keep for about 3 to 5 days.

*Alternative way is to roll the cookies in powdered sugar while they are still warm. The powdered sugar will melt slightly and create a different effect on the cookies. Try both and see which one you like best! Either way it’s delicious.
