Easy Pumpkin Bars take your favorite fall flavors and spices and top them with an amazing homemade cream cheese frosting. This dessert is a fall favorite!

As far as we’re concerned, anything with a cream cheese frosting should be eaten in abundance year-round. While pumpkin bars may seem like a seasonal dessert, we’re here to tell you that you should never let anyone judge your pumpkin love outside of fall. That being said, pumpkin puree is easy to find in the fall, so we tend to be a little pumpkin obsessed this time of year. These bars are a must-have dessert and perfect to bring to your next party!

Can I make easy pumpkin bars without a hand mixer?

You really need a mixer of some sort to combine the butter, oil and sugar, so this is not a recipe that can be done by hand. If you don’t have a hand mixer, you can use a stand mixer.

For the Cream Cheese Frosting:

There’s nothing like homemade cream cheese frosting. If you’re in a hurry and need to cut corners, you can always use store-bought icing.

If you want to add chopped nuts or chocolate chips to your pumpkin bars, sprinkle them over the batter before baking and smooth on the baking sheet. You will need to use about 1 cup of topping.

Freezing Instructions:

If you want to make a big batch ahead of time, you just need to let your bars cool completely before slicing, store in freezer-safe ziplock bags, and keep in the freezer for up to 2 months. When ready to serve, thaw completely on the counter before topping with cream cheese frosting.

Storage Instructions:

Store pumpkin bars in an airtight container at room temperature for up to 7 days, or in the refrigerator for up to 2 months.

Pumpkin Bars

  • 1 1/2 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1/2 cup Oil
  • 3 big egg
  • 1 Canned (15 oz) pumpkin puree
  • 2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon Salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon clove
  • 1/8 teaspoon ginger powder
  • 2 1/2 cup all purpose flour

  • 8 ounce cream cheese soften
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup heavy cream

  • Preheat oven to 350°F. Lightly grease a 13×18 baking dish.

  • In a large bowl, beat together the sugar, butter, and oil with a hand mixer, about 1-2 minutes. Add eggs, vanilla, and squash, and mix well.

  • In a separate bowl, combine the baking powder, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and flour until well combined.

  • Add the dry ingredients to the wet mixture one at a time and combine. After all is added, mix for another 30 seconds to ensure that everything is evenly mixed.

  • Pour the mixture onto a greased baking sheet.

  • Bake in a 350 degree oven for about 25-30 minutes, until lightly golden brown. Remove from oven.

  • Let cool completely, then frost. Sprinkle pumpkin pie spice lightly on top.

  • Using a hand or stand mixer, combine cream cheese, sugar, and vanilla for 1 minute.

  • Add the heavy cream and beat on high speed for another 2 minutes, until the frosting is fluffier.
