These potatoes are delicious! You know I won’t post the recipe if they’re bad, but I have to tell you, these potatoes are special. They are truly full of flavor and mouth watering. This might just be my new favorite way to eat potatoes!

One of the best parts of this recipe is that it’s super easy. I love an easy side dish! All you really need to do is chop up some potatoes, toss them with some zest, and send them to the oven to bake. It’s easy!

Baked Parmesan Pesto Potato Sheet Pan.

This recipe calls for red potatoes. I have found that red potatoes are my favorite to bake. You can also use another type of thin-skinned potato, such as Yukon Gold. Simply chop them into bite-sized pieces before using in recipes. No need to peel, as both red and Yukon Gold potatoes peel well. Avoid things like russet potatoes when roasting like this.

Cooking time is an estimate. Total baking time will depend on the size of your cut potatoes and is given as an estimate. You should roast the potatoes until they are fork tender. Take a test bite before pulling the pan out of the oven. Watch out, you’ll love it and start impatiently sitting down to dinner so you can round them all up!

  • 2 pound red potatoes
  • 1/4 cup Prepare the Pesto
  • 3 tablespoon butter melted
  • 1/2 cup Freshly grated Parmesan cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 cup chopped fresh parsley


  • Preheat oven to 400 degrees.

  • Quarter potatoes and place in a large mixing bowl.

  • Toss potatoes with pesto, melted butter, Parmesan cheese, salt, and pepper.

  • Spread the potatoes evenly on the baking sheet.

  • Bake in preheated oven for 30 minutes, or until potatoes are tender.

  • Garnish with parsley.
