Easy slow cooker recipes are always a favorite. You can throw it in the saucepan in the morning and spend the next 8 hours deciding what to have for dinner. Leftovers? I’m guessing you’re ready for a completely different dinner tomorrow night. This shredded beef is so authentic that it goes great with tacos, burritos, quesadillas, enchiladas…well, you get the idea. It’s great in every way. We love how this recipe uses whole, real ingredients. Well, to call soda a whole, the real ingredient is to walk a fine line. However, we love the way the soda seasons and tenderizes the beef. It’s really amazing what it can do. The sugar and carbonation break down the tough roast, resulting in soft, moist, flavorful shredded beef. It’s so easy, and so delicious.

  • Lime Juice:

    We always say fresh is best, and we stand by it. However, you can do without bottled lime juice in a recipe like this.

  • Garlic Options:

    You can use minced garlic, granulated garlic, or garlic powder. Sticking to garlic granules or garlic powder makes prep time super quick and easy. If you choose to use granules or powder, you will need 1/2 tsp.

  • To sear your roast:

    Roasting your roast on the stove is totally optional, but we found it gave the shredded beef more flavor. If you have time to bake, we highly recommend it!

  • Why is there soda in Easy Slow Cooker Chili Lime Mexican Shredded Beef?

    The sugar and carbonation in the soda breaks down the meat, resulting in the most tender, moist, flavorful shredded beef. This recipe absolutely needs it. But feel free to use any lemonade you like: Sprite, 7-Up, generic brand, Sierra Mist, anything! We strongly recommend that you use sodas with regular sugars instead of dieting. However, you can use diet soda in a pinch.

  • Storage and Reheating Instructions:

    Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in a skillet over medium-low heat until heated through, or in the microwave in 30-second increments, for a total of about 90 seconds.

  • 1 tablespoon olive oil
  • 4 pound Roast Beef Chuck
  • 4 cup Lemon Lime Soda
  • 1 1/2 teaspoon paprika
  • 1 teaspoon Salt
  • 3 clove minced garlic
  • 2 lime Juice (about 1/4 cup)

instruct

  • Heat a large, heavy skillet over medium-high heat. Add the olive oil and fry the roast until browned on both sides.

  • Place the chuck roast in the bottom of a 5- to 8-quart slow cooker. Pour club soda over roast. Season with paprika, salt and garlic.

  • Cover and cook on low for 8 hours, until easily chopped with a fork.

  • Chop and pour over lime juice. Serve hot.

Oven Instructions:

  1. Preheat oven to 350°F. Heat a large oven-safe Dutch oven pot over high heat. Add oil to the pan and fry the roast until browned on all sides.
  2. Pour club soda over roast. Season with paprika, salt and garlic.
  3. Cover and transfer to a preheated 350 degree oven. Cook 3 hours, or until the meat reaches an internal temperature of 202°F and shreds easily with a fork. Chop and pour over lime juice. Serve hot.
